Pancake Day is here so lets go bananas

It’s Pancake Day… Let’s go bananas!!

So its Shrove Tuesday and it seems overly tempting to give in and make pancakes! Who says you can’t? Let’s do it the healthier way!

Ok, so it might not be the traditional pancake recipe but it’s a very good one…..

Banana Pancakes

But first, why are bananas good for our health?

Bananas contain fiber, potassium, vitamin C, vitamin B6 and other beneficial plant compounds. The potassium and magnesium content helps protect against muscle cramps during workouts and at night time. They are rich in pectin, which is a soluble dietary fiber and natural detoxifying agent that is great for digestion and encourages healthy bacteria into the bowel. The high potassium and low sodium content may help to protect your cardiovascular system against high blood pressure, reducing the risk of a heart attack or stroke. Bananas can help improve your mood due to the high levels of tryptophan, which the body converts to serotonin; the mood-elevating brain neurotransmitter. Finally, bananas are one of the best sources of resistant starch, a healthy carbohydrate that keeps you feeling fuller for longer!

This all has to be a good thing right? So, let’s get flipping these pancakes!


(Makes 8 Pancakes)

  • 2 large ripe banana
  • 4 medium eggs, beaten
  • pinch of baking powder
  • splash of vanilla extract
  • 2 tsp coconut oil
  • 50g pecans, roughly chopped
  • 250g raspberries


  • In a bowl mash the banana with a fork until it resembles a thick puree
  • Add the beaten eggs and mix well
  • Mix in baking powder and vanilla extract,
  • Heat a large non-stick frying pan over a medium heat, brush some of the oil
  • Using a ladle of batter make each pancake in turn, cook for 1-2 minute on each side
  • Serve the pancakes on a plate, top with the pecans and raspberries.
  • Enjoy!

This is a great recipe that you can also use for a healthy breakfast any time of year.
